It's all about the coffee

At Sandbox, we embrace innovation and challenge the status quo. That’s why we don’t differentiate between espresso and filter roasts, and we use only light roasts to bring out the best in our coffee. We encourage you to explore and experiment with our coffees—whether you prefer filter, espresso, or flat white, make it your own. Be curious, enjoy the journey and let’s learn from each other!

About the producer

Gicherori AA | POMA

Gicherori AA comes from the Gicherori coffee factory in Embu County on the slopes of Mount Kenya, one of five factories of the Kibugu Farmers’ Cooperative Society with about 1,200 smallholder members. The lot comes through POMA Coffee Research, a Copenhagen-based research and roasting company co-founded by Rasmus Madsen. POMA runs trials in a climate-controlled greenhouse and at partner farms, including a research plot in Embu. AA is Kenya’s top size grade, screen 17/18, and describes bean size only, not cup quality. Its sister lot, Gicherori AB, comes from the same factory one size down.

About the varietal

H2: SL28, SL34, Batian & Ruiru 11

This lot blends four Kenyan varieties. SL28 and SL34 were selected by Scott Laboratories. SL28 belongs to the Bourbon group and is prized for drought resistance and cup quality, while SL34 has a Typica-like background and was selected from a single tree at Loresho Estate in Kabete. Both are non-hybrid and prone to disease. Ruiru 11, a Catimor hybrid released in 1985 after the coffee berry disease epidemic of 1968, and Batian, a composite resistant to leaf rust and coffee berry disease, add resilience. Together they deliver the blackcurrant-like fruit and sparkling acidity Kenya is known for.

Process

Washed

The washed process begins with selective picking of ripe cherries, which are then depulped to remove the outer skin. The beans ferment in water or dry for a controlled period to break down the remaining mucilage before being thoroughly washed and moved to drying beds. Drying typically takes one to two weeks, depending on conditions, with the beans turned regularly to ensure even moisture loss. The result is a clean, transparent cup where the character of the bean and the skill of the producer come through without interference from the fruit.
