In collaboration with Los Patios, a leading Colombian processing and drying facility known for its precision and experimental methods, these coffees are refined with consistent fermentation control and advanced post-harvest techniques. The partnership allows small farmers to access world-class processing infrastructure, resulting in coffees with remarkable clarity, sweetness, and expressive flavor profiles that showcase the best of Huila’s terroir.

About the varietal

This lot combines Geisha, Caturra, Bourbon, and Tabi, four high-performing Arabica varieties with distinct genetic backgrounds. Geisha, an Ethiopian landrace, contributes high aromatic complexity and pronounced acidity; Caturra, a dwarf Bourbon mutation, provides uniform yield and a clean, structured cup; Bourbon adds sweetness, dense cherry formation, and balanced acidity; and Tabi—a cross of Typica, Bourbon, and Timor Hybrid developed in Colombia—offers disease resistance with excellent cup quality, marked by clarity and subtle florals. Together, they create a multi-layered and technically refined profile.

Process

Washed Infused Process

The honey process is a hybrid method that sits between washed and natural processing. After the outer cherry skin is removed, part of the sticky mucilage — the “honey” layer — is left on the beans during drying. Depending on how much mucilage remains, you get variations like yellow, red, or black honey. This process reduces water use compared to washed coffees and enhances sweetness and body while maintaining a clean profile. The result is a cup that combines the clarity of washed coffees with the fruit-forward intensity of naturals.
